  • 1/2 to 3/4 c. brown sugar
  • 3 tsp. caraway seed
  • 1 1/2 tsp. anise seed
  • 3 Tbsp. butter
  • 3 c. water
  • 2 yeast in 1/2 c. water
  • 4 to 6 c. rye flour
  • 3 tsp. salt
  • white flour

Directions

    Boil first 5 ingredients for 5 minutes; cool.

    Add remaining ingredients and enough white flour to make a dough.

    Knead well. Let rise until double in bulk.

    Punch down and let rise again. Shape into 3 loaves.

    Bake at 450° for 10 minutes.

    Reduce heat to 350° and bake 50 minutes more.
