- 1/2 to 3/4 c. brown sugar
- 3 tsp. caraway seed
- 1 1/2 tsp. anise seed
- 3 Tbsp. butter
- 3 c. water
- 2 yeast in 1/2 c. water
- 4 to 6 c. rye flour
- 3 tsp. salt
- white flour
Directions

1Boil first 5 ingredients for 5 minutes; cool.

2Add remaining ingredients and enough white flour to make a dough.

3Knead well. Let rise until double in bulk.

4Punch down and let rise again. Shape into 3 loaves.

5Bake at 450° for 10 minutes.

6Reduce heat to 350° and bake 50 minutes more.
