- 2 large yellow turnips
- 5 cups water
- 2 teaspoons salt
- 1/4 cup butter
- 1/4 cup brown sugar
- 1 teaspoon salt, or to taste
- 1 1/2 cups brown stock (or chicken stock)
- 1/4 teaspoon white pepper
Directions

1Peel the turnips and cut them into half-inch cubes.

2Put in boiling salted water and, when it comes to the boil again, cook 15 minutes.

3Drain.

4Brown the butter lightly in a saucepan, add the turnips, sprinkle with sugar and salt, and keep on stirring until they are lightly browned.

5Add the stock and simmer about half an hour, or until tender.

6Season with white pepper.
