- 2 pkg. boneless, washed chicken breasts, patted dry
- 1/2 c. flour
- 1/3 c. vegetable oil (canola)
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 (13 1/2 oz.) can pineapple chunks
- 1 c. white sugar
- 2 Tbsp. cornstarch
- 3/4 c. vinegar
- 1 Tbsp. soy sauce
- 1/4 tsp. ginger
- 1 chicken bouillon cube
- 2 green peppers, cut into strips
Directions

1Coat chicken with flour.

2Fry in a large skillet and brown all sides.

3Remove and place in shallow baking pan and arrange pieces to fit.

4Sprinkle with salt and pepper.

5Reheat oven to 350°. Drain pineapple juice in measuring cup and add water to make 1 1/4 cups of liquid. In medium saucepan, combine sugar, cornstarch, pineapple juice, vinegar, soy sauce, ginger and bouillon cube. Bring to a boil, stirring until smooth.

6Boil 2 minutes; pour over chicken.

7Add pineapple chunks and green pepper strips.

8Bake 30 to 40 minutes, uncovered, until tender.
