- 1 1/4 to 1 1/2 cups all purpose flour
- 1/4 cup sugar
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon salt
- 6 to 7 tablespoons water
- Vegetable oil (for deep frying)
- Powdered sugar
- Honey (optional)
Directions

1Combine 1 1/4 cups flour, sugar, baking powder and salt in medium bowl.

2Gradually mix in enough water to form moist but not wet dough.

3Turn out dough onto floured surface and knead until smooth, sprinkling with more flour or moistening with more water by teaspoonfuls if necessary, about 10 minutes.

4Wrap dough in plastic.

5Let rest at room temperature at least 30 minutes and up to 1 day.

6Pour oil into heavy medium saucepan to depth of 1 inch and heat to 350F.

7Roll out dough on lightly floured surface to 1/8-inch thickness.

8Cut into 1 1/2-inch squares.

9Working in batches, fry dough until puffed and golden brown, turning occasionally, about 2 minutes.

10Using slotted spoon, transfer fritters to paper towels and drain.

11Sift powdered sugar over fritters.

12Serve with more powdered sugar and honey, if desired.
