Sweet Crispy Pickles

Ingredients

  • 7 pounds fresh cucumbers
  • 2 qts white vinegar
  • 4 pounds sugar
  • 1 T celery seed
  • 1 T mixed pickling spice
  • 1 T whole cloves
  • 1 T pickling salt (do not substitute)

Directions

    Peel cucumbers and slice 3/4 inch thick.

    Seed cucumbers with a doughnut cutter.

    Soak cucumbers overnight in lime water (2 cups builders lime to 2 gallons of water).

    Rinse very well.

    Cover with ice water for 3 hours.

    Drain.

    Cover with vinegar, sugar spice mix and allow to stand overnight.

    Bring to a boil and cook 35 minutes. Jar and seal.

    Makes 6-7 pints.
