Sweet Pastry Shells

Ingredients
- 1 c. all-purpose flour
- 4 Tbsp. butter
- pinch of superfine sugar
- 1 egg yolk
- 1 Tbsp. ice water
Directions

1Sift the flour into a mixing bowl and rub in the butter.

2Add the egg yolk and enough water to bind to a firm dough.

3Roll out thinly and stamp out 2-inch circles with a fluted pastry cutter. Press into tiny patty pans and chill for 30 minutes.

4Preheat the oven to 400°.

5Fill each pastry case with a crumpled piece of aluminum foil and bake for 10 to 15 minutes.

6Remove the foil halfway through baking to allow the pastry shells to dry out and become crisp and golden brown.
