- 2 cups cauliflower florets
- 1 tablespoon fresh parsley, minced
- 1 medium onion
- 2 medium carrots
- 1/4 cup pumpkin seeds, hulled
Directions

1Slice onion thin; separate into rings.

2Peel carrots and slice diagonally.

3Saute onion in oil 1 to 2 minutes.

4Toss in cauliflower and carrots.

5Add a bit of water; cover and steam vegetables about 15 minutes, stirring occasionally.

6Toss with parsley and pumpkin seeds.

7Serve hot.
