Sweet Pickle Rings(Red Pickles)

Ingredients

  • 1 gal. cucumbers
  • 5 qt. water
  • 1/2 oz. red food coloring
  • 5 c. vinegar
  • 9 c. sugar
  • 8 sticks cinnamon
  • 1 c. pickling lime
  • 6 c. vinegar
  • 1 Tbsp. powdered alum
  • 5 c. water
  • 1 pkg. cinnamon red hots

Directions

    Peel and core cucumbers (sliced 1/2-inch thick). Scrape out seeds (look like rings).

    Mix solution of pickling lime and 5 quarts water (plus enough to cover cucumbers).

    Let stand 24 hours (time is not critical, can stand longer).

    Stir occasionally with wooden spoon.

    Be sure to use porcelain or glass container to set brine. Drain well.

    Rinse and cover with vinegar, red food coloring, powdered alum and enough water to cover cucumbers.

    Let stand 2 hours or a little longer. Drain and discard solution.
