- 6 medium sweet potatoes
- 12 cup evaporated skim milk
- 12 cup sugar
- 2 eggs
- 12 cup coconut, shredded
- 12 cup brown sugar
- 12 cup pecans, chopped
- 2 tablespoons light butter, melted
Directions

1Peel and cook the sweet potatoes until fork tender.

2In the mixer, combine eggs and sugar and beat until well mixed.

3Add milk.

4Add sweet potatoes and mix until all lumps are gone and the consistency is light and fluffy.

5In a separate bowl, mix brown sugar, coconut, and pecans with 2T of melted butter.

6Pour sweet potatoes in a greased 9x9 casserole and top with brown sugar mixture.

7Bake at 350 for 30 minutes.
