Sweet Speared Shrimp

- 2 tbsp. vegetable oil
- 3/4 tsp. Freshly ground black pepper
- 3/4 tsp. kosher salt
- 36 large shrimp
- 1/2 large red onion
- 2 1/2 c. hoisin sauce
- 3 limes
Directions

1Soak your wooden skewers in water for 30 minutes.

2Meanwhile, preheat the broiler or light a medium-hot fire in a charcoal or gas grill.

3Whisk together the oil, pepper, and salt in a large bowl.

4Add the shrimp and toss to coat.

5Thread 3 shrimp onto a skewer, separating the shrimp with 2 or 3 pieces of red onion.

6Repeat until all the shrimp are skewered.

7Leave about 3 inches on the bottom of each for a handhold.

8Brush the shrimp with hoisin sauce (use about 1/2 cup).

9If broiling, place the skewers on a broiling pan and place the pan about 4 inches from the heat.

10If grilling, place them on the grill.

11Broil or grill for 3 minutes.

12Turn the shrimp over, brush with another 1/2 cup of the hoisin sauce, and broil or grill for 3 minutes more.

13Place the skewers on a serving platter.

14Swirl some of the remaining 1/2 cup of the hoisin sauce over the shrimp.

15Place the rest of the sauce in a small bowl on the platter.

16Decorate the platter with the lime wedges and serve.
