Sweet Spiced Pork And Noodles

  • 6 slices pork belly, cut into 3-inch lengths
  • 2 tbsp dark soy sauce
  • 1/3 cup light soy sauce
  • 1/3 cup sweet sherry
  • 3/4 cup firmly packed brown sugar
  • 2 None whole star anise
  • 1 None cinnamon stick
  • 1 piece (3/4 inch) fresh ginger, thinly sliced
  • 3 cloves garlic, peeled and bruised
  • 2 lbs fresh rice noodles
  • 1 medium carrot, cut into thin matchsticks
  • 3 oz snow peas, trimmed and thinly sliced lengthwise
  • 1 cup bean sprouts, rinsed
  • 2 None green onions, thinly sliced diagonally

Directions

    Bring a large saucepan of water to a boil. Add pork; boil for 3 mins. Drain pork. Add soy sauces, sherry, sugar, star anise, cinnamon, ginger and garlic to pan; cook and stir on medium heat for 1 min or until combined.

    Return pork to pan. Bring to a boil. Reduce heat to low; simmer, uncovered, for 1 1/2 hours or until pork is very tender and sauce is syrupy. (You may need to stir occasionally as sauce thickens.)

    Meanwhile, soak noodles in boiling water in a medium heatproof bowl for 3 mins. Stir to separate strands. Drain.

    Place carrot and snow peas in another heatproof bowl. Cover with boiling water; let stand for 3 mins. Drain. Toss vegetables with bean sprouts and onion.

    To serve, place noodles in large shallow serving bowls. Top with pork and drizzle with sauce. Pile vegetables over pork and serve while hot.
