  • 3 lbs top round steaks, 1 1/2 inch thick
  • 2 cups V8 vegetable juice
  • 1 tablespoon basil
  • 4 cloves minced garlic
  • 1 medium onion, chopped
  • 1 12 tablespoons olive oil
  • 2 cloves minced garlic

  • 3 large tomatoes, chopped
  • 12 cup flat leaf parsley, chopped
  • salt & pepper
  • 1 teaspoon sugar

Directions

    Prepare the marinade with the V-8, basil, garlic and one onion and place it and the steak in a large zip-lock bag and refrigerate overnight.

    Remove and discard marinade.

    Pat dry.

    In large dutch oven, brown in olive oil about 4 min.

    per side over med/high heat.

    In sauce pan, saute the remaining onion& garlic for about 2 minutes.

    Add tomatoes, parsley, sugar and salt& pepper.

    Cook in 400 degree oven for 25 minutes uncovered, stir, cover duch oven and cook an additional 25 minutes.
