Tabasco Marinated Shrimp

Ingredients

  • 3 lb. raw shrimp (fresh or frozen)
  • 2 (12 oz.) bottles or cans beer
  • 1/2 tsp. Tabasco sauce
  • 1 Tbsp. salt
  • 1 Tbsp. dry mustard
  • 2 Tbsp. vinegar
  • 1 slice onion
  • 2 Tbsp. honey
  • 1/4 tsp. bitters (Peychaud or Angostura)

    Remove shells and veins from shrimp.

    Rinse.

    In a saucepan, combine beer, Tabasco, salt, mustard, vinegar, onion, honey and bitters.

    Bring to a boil and simmer about 1 minute.

    Add only enough cleaned shrimp as will be covered by the liquid mixture. Return the mixture to a boil and then simmer 2 to 5 minutes, depending on the size of the shrimp.

    Remove shrimp from the liquid.

    Add remaining shrimp and repeat the cooking procedure.
