- 3/4 c. bulgur (#2)
- 2 large bunches parsley or 1 qt., chopped
- 1 large bunch green onions (including tops), chopped
- 2 large tomatoes, finely chopped
- 1/8 tsp. cinnamon
- 2 tsp. salt
- 2/3 c. lemon juice
- 1/2 c. olive oil
Directions

1Cover bulgur with water in a small saucepan.

2Bring to a boil and drain.

3Cool.

4Combine with chopped parsley, green onions and tomatoes.

5Stir together cinnamon, salt, lemon juice and olive oil. Pour over salad and stir.
