  • 3/4 c. bulgur (#2)
  • 2 large bunches parsley or 1 qt., chopped
  • 1 large bunch green onions (including tops), chopped
  • 2 large tomatoes, finely chopped
  • 1/8 tsp. cinnamon
  • 2 tsp. salt
  • 2/3 c. lemon juice
  • 1/2 c. olive oil

Directions

    Cover bulgur with water in a small saucepan.

    Bring to a boil and drain.

    Cool.

    Combine with chopped parsley, green onions and tomatoes.

    Stir together cinnamon, salt, lemon juice and olive oil. Pour over salad and stir.
