Ingredients
- 2/3 c. fine bulgur
- 3 medium size tomatoes, finely chopped
- 3/4 c. finely chopped fresh parsley
- 1 medium size onion, finely chopped
- 4 Tbsp. fresh lemon juice
- 1 1/2 tsp. salt
- 4 Tbsp. olive oil
- 1 1/2 Tbsp. finely chopped fresh mint
Directions

1Place the bulgur (crushed wheat) in bowl and cover with cold water.

2Let soak for 10 minutes; then drain.

3Wrap bulgur in cheesecloth and squeeze vigorously until dry.

4Drop bulgur into a deep bowl; add tomatoes, parsley, onions, lemon juice and salt. Toss gently but thoroughly, mixing together with a fork.

5Just before serving, stir in the olive oil and mint.

6Taste for seasoning.
