- 6 ounces cracked wheat (bulghar wheat)
- salt & freshly ground black pepper
- 2 lemons, juice
- 2 tablespoons extra virgin olive oil
- 3 ounces flat leaf parsley, chopped
- 1 ounce mint leaf, chopped
- 4 scallions, finely sliced
- 3 roma tomatoes, quartered
Directions

1Soak the cracked wheat in cold water for 20 mins, drain and squeeze dry.

2Put the wheat in a glass bowl and season with salt and pepper.

3Add the lemon juice and olive oil.

4Allow to rest for 30 minutes.

5Add the parsley, mint and scallions.

6Check the seasoning and top the salad with the tomato quarters.
