  • 1/3 cup bulgur (cracked wheat)
  • 1 bunch green onions, sliced
  • 1 tomato, diced
  • 1/2 English cucumber, finely chopped
  • 1 parsley, chopped
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1/4 tsp salt
  • 1 pinch cracked black pepper

    rinse bulgur in fine mesh sieve.

    cover with boiling water and let soak 20 minutes.

    meanwhile, combine remaining ingredients.

    rinse bulgur in cold water and squeeze excess water from it.

    stir bulgur into parsley mixture.

    chill at least 1 hour before serving.
