- 1/3 cup bulgur (cracked wheat)
- 1 bunch green onions, sliced
- 1 tomato, diced
- 1/2 English cucumber, finely chopped
- 1 parsley, chopped
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1/4 tsp salt
- 1 pinch cracked black pepper
Directions

1rinse bulgur in fine mesh sieve.

2cover with boiling water and let soak 20 minutes.

3meanwhile, combine remaining ingredients.

4rinse bulgur in cold water and squeeze excess water from it.

5stir bulgur into parsley mixture.

6chill at least 1 hour before serving.
