- 2 medium-size tomatoes
- 3 c. chopped parsley
- 1/2 c. olive oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 6 Tbsp. lemon juice
- 1/4 c. chopped mint
- romaine or leaf lettuce
Directions

1Wash bulgur, place in large bowl and cover with hot water; let stand for 20 minutes.
