Ingredients

  • 1 c. bulgur or finely cracked wheat
  • 1 1/2 c. minced or chopped parsley
  • 3 tomatoes, peeled and chopped
  • 1 green pepper, chopped
  • 1 cucumber, peeled and chopped
  • 2 to 3 green onions, chopped
  • 1/2 c. olive oil
  • 1/2 c. fresh lemon juice
  • salt
  • pepper
  • 1/2 c. minced fresh mint leaves

Directions

    Soften bulgur by soaking 1 hour in enough water to cover. Drain, pressing out excess water.

    Combine all other ingredients and toss until well coated.

    Chill.
