- 1 c. bulgur or finely cracked wheat
- 1 1/2 c. minced or chopped parsley
- 3 tomatoes, peeled and chopped
- 1 green pepper, chopped
- 1 cucumber, peeled and chopped
- 2 to 3 green onions, chopped
- 1/2 c. olive oil
- 1/2 c. fresh lemon juice
- salt
- pepper
- 1/2 c. minced fresh mint leaves
Directions

1Soften bulgur by soaking 1 hour in enough water to cover. Drain, pressing out excess water.

2Combine all other ingredients and toss until well coated.
