Ingredients

  • 2 to 3 bunches parsley
  • 1 medium onion, chopped
  • 2 cucumbers, diced
  • 4 to 5 tomatoes, diced
  • 3/4 c. bulgur wheat
  • 1/4 c. virgin olive oil
  • 1/4 c. lemon juice
  • 1 tsp. cumin
  • salt to taste

Directions

    In a large bowl, layer ingredients as follows:

    wheat on bottom (dry), tomatoes, cumin and salt, lemon juice, cucumbers, onions and chopped parsley.

    Cover with Saran Wrap and refrigerate at least 3 hours, preferably overnight.

    Before serving, add olive oil and mix thoroughly.
