- 2 cucumbers, diced
- 4 to 5 tomatoes, diced
- 3/4 c. bulgur wheat
- 1/4 c. virgin olive oil
- 1/4 c. lemon juice
- 1 tsp. cumin
- salt to taste
Directions

1In a large bowl, layer ingredients as follows:

2wheat on bottom (dry), tomatoes, cumin and salt, lemon juice, cucumbers, onions and chopped parsley.

3Cover with Saran Wrap and refrigerate at least 3 hours, preferably overnight.

4Before serving, add olive oil and mix thoroughly.
