Ingredients
- 1 c. medium bulgar
- 1/2 c. water
- 1 1/2 Tbsp. oil
- 1/2 onion, chopped and sauteed
- 1 c. chopped green onion
- 1/2 c. chopped parsley
- 1/4 c. bell pepper
- 1 small can V-8 juice (optional)
- 1/2 c. tomato sauce
- 1 fresh tomato, chopped
- 1 lemon, juiced
- salt, pepper and cayenne to taste
Directions

1Mix water and bulgar together to moisten.

2Saute onion and oil. Add to bulgar.

3Set aside.

4Mix together green onion, parsley and bell pepper.

5Mix together remaining ingredients.

6Add bulgur mixture.

7Mix well, refrigerate and let stand 15 minutes or more. Serve.
