Ingredients

  • 1 c. bulgar wheat
  • 1 1/2 c. boiling water
  • 1/4 c. lemon juice
  • 1/2 c. chopped scallions
  • 1/4 c. good olive oil
  • salt and pepper
  • 2 medium tomatoes, chopped
  • 1 c. chopped fresh parsley
  • Feta cheese
  • 2 cloves garlic, chopped fine
  • 1 c. fresh mint, leave choppy

Directions

    If using raw bulgur, soak 3 hours in boiling water.

    Drain. Add salt, lemon juice, chopped scallion, olive oil, garlic and chill in refrigerator at least 2 hours.

    Add tomato, parsley and mint; place in lettuce-lined bowl.

    Trim with crumbled Feta cheese.
