- 1 c. bulgar wheat
- 1 1/2 c. boiling water
- 1/4 c. lemon juice
- 1/2 c. chopped scallions
- 1/4 c. good olive oil
- salt and pepper
- 2 medium tomatoes, chopped
- 1 c. chopped fresh parsley
- Feta cheese
- 2 cloves garlic, chopped fine
- 1 c. fresh mint, leave choppy
Directions

1If using raw bulgur, soak 3 hours in boiling water.

2Drain. Add salt, lemon juice, chopped scallion, olive oil, garlic and chill in refrigerator at least 2 hours.

3Add tomato, parsley and mint; place in lettuce-lined bowl.

4Trim with crumbled Feta cheese.
