Ingredients
- 1 3/4 c. bulgur wheat
- 3 bunches parsley
- 8 to 10 tomatoes
- 2 bunches green onions (can use regular onions)
- 1/4 to 1/2 c. lemon juice
- 1/4 c. olive oil
Directions

1Soak bulgur wheat in 1 3/4 cups of water.

2It should be soaked a couple of hours or more.

3If you want to speed up the process, soak in hot water.

4Wash parsley; drain well and let dry in a towel.

5Cut off the stems.

6Mince in a food processor or by hand. Cut up tomatoes in fairly small bits.

7Cut onions fine.

8Use either fresh or bottled lemon juice.

9Mix all ingredients.

10Add salt to taste.

11Tastes really good if left sitting in the refrigerator for several hours.

12Yields 8 servings.
