- 1 1/4 c. bulgur wheat
- 4 c. boiling water
- 1 1/2 c. parsley
- 3/4 c. mint
- 3 medium tomatoes
- 3/4 c. lemon juice
- 1/4 c. olive oil
- 1/4 c. chopped Vidalia onion
- 1 tsp. salt
Directions

1Pour boiling water over bulgur.

2Let stand 2 hours.

3Put in colander.

4Top with plate to drain.

5Put lemon juice and olive oil in blender.

6Blend in parsley and mint.

7Chop tomatoes and onion. Mix all ingredients and chill.

8Keeps well overnight.
