Ingredients

  • 5 cups flat leaf parsley
  • 12 cup Bulgar wheat
  • 3 medium tomatoes
  • 2 large lemons
  • 14 cup virgin olive oil
  • 14 cup vegetable oil
  • salt and pepper
  • 2 spring onions, finely chopped or 1 cup of raw broad bean (when in season)

Directions

    Place crushed wheat in a cup of luke warm water.

    Chop parsley finely.

    DO NOT use a blender.

    Dice tomatos.

    Squeeze Lemons.

    Have oil ready.

    Place the crushed wheat at bottom of salad bowl.

    Add Parsley, Tomato, Oil& Lemon.

    Add Salt& Pepper to Taste.

    Stir generously and place in fridge to chill.
