- 1 cup bulgur
- 1/2 cup chopped parsley fresh
- 1/2 cup coriander fresh chopped
- lemon juice to taste
- 1/2 cup walnuts
- olive oil to taste
- mint resh chopped, to taste
Directions

1Soak the bulgur in cold water for about half an hour, until it softens.

2Drain the bulgur well, so there is no excess water in it and put it in a serving bowl.

3While the bulgur soaks in water, finely chop the herbs, add them to the bowl.

4Heat a skillet with a bit of oil, roast the walnuts until golden, chop them and add them also to the bowl.

5Season with lemon juice, olive oil, salt and black pepper. Mix well, and serv
