- 1 lb. ground beef
- 1/2 c. chopped onion
- 1 (8 oz.) can tomato sauce
- 1/3 c. water
- 1 (1 1/4 oz.) pkg. taco mix
- 2 eggs
- 1 c. milk
- 1 (16 oz.) can red kidney beans
- 1 1/2 c. shredded Monterey Jack cheese
- 10 taco shells, crushed
- 1 c. lettuce, shredded
- 1/2 small tomato, chopped
- 1/4 c. sliced ripe olives
- 1/2 c. Monterey Jack cheese, shredded
Directions

1In large skillet, cook beef and onion until brown.

2Drain off fat.

3Add tomato sauce, water and taco seasoning.

4Heat through. Remove from heat.

5Beat eggs, stir in milk and add small amount tomato sauce to egg mixture, stirring constantly.

6Return to skillet.

7Stir in beans, the 1 1/2 cups cheese and crushed tacos. Turn into a 12 x 7 1/2-inch baking dish.

8Bake 30 minutes at 350°. Top with lettuce, 1/2 cheese, olives and tomato.

9Let stand 5 to 10 minutes before cutting in squares.
