Taco Casserole

Ingredients

  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1 (8 oz.) can tomato sauce
  • 1/3 c. water
  • 1 (1 1/4 oz.) pkg. taco mix
  • 2 eggs
  • 1 c. milk
  • 1 (16 oz.) can red kidney beans
  • 1 1/2 c. shredded Monterey Jack cheese
  • 10 taco shells, crushed
  • 1 c. lettuce, shredded
  • 1/2 small tomato, chopped
  • 1/4 c. sliced ripe olives
  • 1/2 c. Monterey Jack cheese, shredded

Directions

    In large skillet, cook beef and onion until brown.

    Drain off fat.

    Add tomato sauce, water and taco seasoning.

    Heat through. Remove from heat.

    Beat eggs, stir in milk and add small amount tomato sauce to egg mixture, stirring constantly.

    Return to skillet.

    Stir in beans, the 1 1/2 cups cheese and crushed tacos. Turn into a 12 x 7 1/2-inch baking dish.

    Bake 30 minutes at 350°. Top with lettuce, 1/2 cheese, olives and tomato.

    Let stand 5 to 10 minutes before cutting in squares.
