- 1 lb. ground beef
- 1/2 cup chopped onion
- 8 oz. tomato sauce
- 1/3 cup water
- 1 1/4 oz. envelope taco seasoning mix
- 2 eggs
- 1 cup milk
- 16 oz. can red kidney beans, drained
- 1 1/2 cup shredded Monterey Jack Cheese
- 10 taco shells coarsely crushed
- 1 head lettuce
- 1 or 2 tomatoes - diced
- 1/2 cup Monterey Jack Cheese shredded
Directions

1In large skillet cook ground beef and onion till beef is brown, drain.

2Stir in tomato sauce, water and taco seasoning mix and heat through.

3Remove from heat.

4Beat eggs, stir in milk.

5Add small amount of tomato sauce mixture to the egg mixture, stirring constantly.

6Return all to skillet.

7Stir in kidney beans, 1 1/2 cup Monterey Jack and the crushed tacos.

8Turn into a 12 by 7 1/2 by 2-inch baking dish.
