  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 8 oz. tomato sauce
  • 1/3 cup water
  • 1 1/4 oz. envelope taco seasoning mix
  • 2 eggs
  • 1 cup milk
  • 16 oz. can red kidney beans, drained
  • 1 1/2 cup shredded Monterey Jack Cheese
  • 10 taco shells coarsely crushed
  • 1 head lettuce
  • 1 or 2 tomatoes - diced
  • 1/2 cup Monterey Jack Cheese shredded

Directions

    In large skillet cook ground beef and onion till beef is brown, drain.

    Stir in tomato sauce, water and taco seasoning mix and heat through.

    Remove from heat.

    Beat eggs, stir in milk.

    Add small amount of tomato sauce mixture to the egg mixture, stirring constantly.

    Return all to skillet.

    Stir in kidney beans, 1 1/2 cup Monterey Jack and the crushed tacos.

    Turn into a 12 by 7 1/2 by 2-inch baking dish.
