Taco Mashed Potatoes

  • 1 pound Ground Beef Or Turkey
  • 1 whole Small Onion, Chopped
  • 1 whole Envelope, Taco Seasoning Mix
  • 1 cup Shredded Colby/jack Cheese, Shredded
  • 24 ounces, weight Mashed Potatoes, Homemade Or Store Bought
  • 1 whole Egg

Directions

    Preheat oven to 375 degrees F. Grease an 8-9 baking dish.

    In a bowl, mix together potatoes, egg and 1/2 cup of cheese.

    Set aside.

    In a large skillet, brown ground beef with chopped onion until no longer pink.

    Drain if necessary.

    Return to pan and stir in taco seasoning.

    Spoon meat on to bottom of baking dish.

    Spread potato mixture on top of taco meat.
  9. 9
    Sprinkle remaining 1/2 cup of cheese on top.

    Bake for 30 minutes or until heated through.
