Ingredients

  • 1 lb. ground beef
  • 1/4 c. chopped onion
  • 2 c. fresh corn
  • 1 (16 oz.) can tomatoes with liquid, cut up
  • 1 (15 1/2 oz.) can kidney beans, rinsed and drained
  • 1 (8 oz.) can tomato sauce
  • 1 (1 1/4 oz.) envelope taco seasoning
  • corn chips (optional)
  • shredded cheese (optional)
  • sour cream (optional)

Directions

    In a large saucepan, brown beef and onion; drain.

    Add corn, tomatoes, kidney beans, tomato sauce and taco seasoning.

    Cover and simmer for 15 minutes, stirring occasionally.

    Serve with corn chips, cheese and/or sour cream, if desired.

    Yield 4 to 6 servings (1 1/2 quarts).
