Ingredients

  • 2 lb. ground beef
  • 1 small onion, chopped
  • 3 (4 oz. each) cans chopped green chilies
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 (15 oz.) can pinto beans, drained and rinsed
  • 1 (16 oz.) can lima beans
  • 1 pkg. taco seasoning (1 1/4 oz.)
  • 1 1/2 c. water
  • 1 pkg. Ranch dressing mix (1 oz.)
  • 1 (14 1/2 oz.) can hominy, drained
  • 3 cans stewed tomatoes (14 1/2 oz., I use two 28 oz. cans)
  • 1 (15 oz.) can red kidney beans, drained and rinsed
  • shredded Cheddar cheese
  • tortilla chips

Directions

    In a large Dutch oven, brown beef and onion; drain fat.

    Add all remaining ingredients except last two.

    Bring to boil.

    Reduce heat and simmer 30 minutes.

    Top with cheese.

    Serve with tortilla chips.
