Taco Soup

Ingredients

  • 1 to 1 1/2 lb. ground beef
  • 1/2 c. chopped onions
  • 1 (28 oz.) can whole tomatoes, with liquid
  • 1 (14 oz.) can kidney beans, with liquid
  • 1 (17 oz.) can whole kernel corn, with liquid
  • 1 (8 oz.) can tomato sauce
  • 1 pkg. taco seasoning
  • grated cheese
  • 1 to 2 c. water
  • salt and pepper to taste

Directions

    Brown ground beef in heavy kettle.

    Add onions, brown and drain.

    Add whole tomatoes, kidney beans, corn, tomato sauce, taco seasoning, 1 to 2 cups water and salt and pepper to taste.

    Simmer for 15 minutes.

    Ladle into bowls and top with grated cheese. Makes 6 to 8 servings.

    Good with nacho chips.

    (This can be simmered several hours in a crock-pot.)
