Taco Soup

Ingredients

  • 1 pound extra lean ground beef 93% lean
  • 1 can rotel tomatoes
  • 2 cans tomato sauce
  • 1 can red kidney beans dark
  • 1 can pinto beans
  • 1 can black beans
  • 1 can corn whole kernal
  • 1 can cream-style corn
  • 2 cans chicken broth
  • 1 package taco seasoning
  • 1 package ranch dip mix
  • 1 onion medium, chopped
  • 8 ounces shredded cheddar cheese
  • 8 ounces sour cream
  • 1 bag tortilla chips

Directions

    Brown ground beef in a dutch oven pot that can hold all of the ingredients. Add onions so they can soften.

    Open all of the cans (do not drain) and dump into the pot with the ground beef. Stir the soup.

    Add the taco seasoning and the ranch dip mix to the soup and stir.

    Bring the soup to a boil, and then set to a low simmer. Simmer for 20-30 minutes stirring occassionally.

    Serve with cheese, sour cream, and tortilla chips as garnish.
