Directions

    Aubergine and sweet potato in oven (aubergine longer, with olive oil)

    fry spices in pan, then add garlic, chillie, onions, then tomatoes and chickpeas. Add aubergine and sweet potato at very end (not to be too soft when served)

    mix yogurt with mint (cucumber if wanted)

    serve with Pita bread and couscous
