- 8 carrots, sliced
- 1/2 c. mayonnaise
- 1 Tbsp. minced onion
- 1 Tbsp. horseradish
- 1/2 tsp. salt
- 1/2 c. fine cracker crumbs
- dash of paprika
- 1/4 c. chopped parsley
Directions

1Cook carrots until just tender.

2Drain, saving 1/4 cup of cooking liquid.

3Place carrots in greased ovenproof serving dish. In small bowl, combine reserved liquid with mayonnaise, onion, horseradish and salt.

4Spread over carrots.

5Sprinkle with cracker crumbs, paprika and parsley.

6Bake at 375° uncovered for 15 to 20 minutes.
