Ingredients

  • 1 c small pearl tapioca
  • 6 c water
  • 1 c milk
  • 2 14-oz cans sweetened condensed milk
  • 6 eggs, separated
  • scant tsp salt
  • 2 tsp vanilla
  • ground nutmeg
  • (optional: 2c fruit or 6T cocoa w/6T sugar)

Directions

    Soak tapioca in water 30 mins.

    Add milk, condensed milk, lightly beaten yolks.

    STIR while bringing to a boil over med. heat.

    Simmer 10-15 min over low heat, stirring often.

    Whip egg whites to soft peaks.

    Temper by gradually folding in 3 c hot pudding.

    (Add fruit or cocoa & sugar here if desired)

    Fold eggs into pudding, then cool 10-15 min.

    Fold in vanilla. Serve warm or chill 2 hrs and serve cold with nutmeg.
