- 50 g tapioca
- 600 ml milk
- 2 tablespoons sugar
- 15 g butter
- 14 teaspoon cinnamon or 14 teaspoon mixed spice or 14 teaspoon nutmeg, ground
Directions

1Preheat oven to 170 C / 325 F / Gas 3 .

2Put the tapioca in a buttered 1.1 litre oven-proof dish.

3Pour in 600 ml (1 pint) milk.

4Add the sugar and butter.

5Sprinkle the top with cinnamon, mixed spice or nutmeg.

6Add the sugar and butter and continue to cook for 10 minutes, until thickened, stirring frequently.

7Pour into a buttered 1.1 litre (2 pint) oven-proof dish.

9Bake tapioca for 2 - 2 1/2 hours.

10Stir 2 or 3 times during the first hour, but leave for the remaining time to form a crust.

11Serve hot or cold, plain or topped with fresh fruit, chopped nuts or thick natural yogurt.
