  • 1/3 c. sugar
  • 3 Tbsp. tapioca
  • 2 3/4 c. milk (may use 2% milk)
  • 1 egg, well beaten (may use 1/4 c. egg substitute)
  • 1 tsp. vanilla

Directions

    Mix sugar, tapioca, milk and egg in a saucepan; let stand 5 minutes.

    Stirring constantly, cook on medium heat until mixture comes to a full boil.

    Remove from heat.

    Stir in vanilla.

    Cool 20 minutes.

    Stir.

    Spoon into dishes.
