Taramosalata (Fish Roe Salad)

- 4 oz. smoked cods roe
- 1 lg. lemon, juice of (or more to taste)
- 2 lg. slices white bread, crusts removed and soaked in water
- 3 to 4 fl. oz. olive oil
- 1/2 sm. onion, grated, juice drained off
Directions

1Skin the roe and put in a food processor or blender with the lemon juice.

2Squeeze the bread dry, add to the mix and blend well.

3Slowly add the olive oil until the mix is the consistency of mayonnaise.

4Mix in the onion at the end and add more lemon if wished.
