- 8 slices firm white bread (preferably at least a few days old)
- 2 cups water
- 1/3 cup tarama (carp or cod roe)
- 5 tablespoons lemon juice
- 2 cups extra virgin olive oil
Directions

1In a medium bowl, combine bread and water. Let bread soak for one minute then squeeze out all moisture and set aside.

2Add tarama and 3 tablespoons lemon juice to the bowl of a food processor. Pulse until combined. Add the bread and remaining lemon juice and pulse until combined.

3With motor running, add oil and blend until mixture is light and fluffy.
