Tarator - Cold Summer Soup

Ingredients

  • 400 ml yogurt
  • 300 ml cold water
  • 1 large cucumber or two small, peeled and finely chopped.
  • 3 tbsp Sun flour or olive oil
  • 1 Salt to taste
  • 1 A few stems of fresh fennel, or dry if you do not have fresh
  • 2 tbsp ground walnuts
  • 2 clove garlic, crushed to a puree.

Directions

    Mix all the dry ingredients.

    Leave the garlic out if you are off to a business meeting or a date.

    Add the water to the yogurt and stir well, add to the rest of the ingredients.

    You can use more or less water according to your preferences.

    Add some ice cubes inside to be cold and refreshing on a hot summer day.

    Garnish each bowl or cup of soup with some fennel and sprinkle some more walnuts if you like.

    More salt and black pepper can be offered additionally for everyone to add to taste.
