Tarragon Chicken With Crisp Potatoes

- 2 tablespoons oil
- 1 lemon peel finely grated and lemon juiced
- 1/4 cup fresh tarragon chopped
- 2 1/4 pounds chicken drumsticks
- 6 potatoes peeled and sliced
- salad Arugula, to serve

1Preheat the oven to 400°F.

2Combine oil, lemon peel and juice, and tarragon in a large baking dish. Add drumsticks, season to taste and toss to coat. Bake for 1 hour or until cooked through.

3Place potatoes in a microwave-safe dish. Cover with plastic wrap and microwave on high (100%) for 5 mins, until partially cooked. Arrange in a single layer on a baking pan. Season to taste. Bake in oven with chicken for 40-45 mins, until golden.

4Serve chicken with crisp potatoes and arugula salad.
