- 2 lb. medium shrimp, cooked, shelled and deveined
- 1/4 c. safflower oil
- 1/4 c. olive oil
- 2/3 c. tarragon vinegar
- 6 Tbsp. black peppercorn
- 2 Tbsp. minced fresh parsley
- 1 Tbsp. chopped fresh tarragon leaves
- 1 white onion, thinly sliced
- 2 large lemons, thinly sliced
Directions

1Remove tails from shrimp.

2Combine shrimp, oils, vinegar, peppercorn, parsley, tarragon, onion and lemon slices in large bowl.

3Marinate in refrigerator at least 3 hours, tossing frequently.
