- 1 tablespoon butter or margarine, at room temperature
- 1/4 cup sugar
- 1/2 teaspoon grated lemon peel
- 2 large egg whites
- 2 tablespoons nonfat milk
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1 cup all-purpose flour
- 2 1/4 teaspoons raspberry or strawberry jam
Directions

1Beat butter with sugar and lemon peel until well blended.

2Beat in egg whites, milk, and vanilla.

3Beat in baking powder.

4Add flour and stir until batter is evenly moistened.

5Drop batter in 2-tablespoon portions about 3 inches apart on nonstick baking sheets.

6Onto the center of each cookie, spoon 1/4 teaspoon jam.

7Bake in a 350° oven until cookies are pale brown on top and golden on bottom, 13 to 15 minutes. Transfer to racks to cool. Serve warm or cool.
