Ten Layer Salad

Ingredients

  • 1/2 pkg. fresh spinach, washed and drained
  • 5 to 6 scallions, sliced fine
  • 4 stalks celery, sliced fine
  • 1 green pepper, chopped fine
  • 1 pkg. frozen peas, cooked, drained and cooled
  • 1 1/2 c. mayonnaise
  • 1 Tbsp. sugar
  • 1/4 c. Parmesan cheese
  • 1/4 c. shredded Cheddar cheese
  • 6 to 7 slices crumbled, cooked bacon

Directions

    Arrange first 6 ingredients in layers in 13 x 9-inch dish. Sprinkle with sugar, then Parmesan cheese and cover with Cheddar cheese.

    Top with bacon and cover with plastic wrap.

    Make 24 hours ahead of time and refrigerate until served.

    I also like to add a layer of fresh sliced mushrooms.

    Or make it a main dish by adding a layer of ham strips.
