- 1 1/4 c. 100% bran or all-bran
- 1 c. skim milk
- 1 c. all-purpose flour
- 1/4 c. sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 egg
- 1/4 c. vegetable oil (canola)
- 1/2 c. raisins
Directions

1Preheat oven to 400°.

2In a large bowl, stir together the cereal and milk; let stand for 5 minutes.

3In small bowl, combine the flour, sugar, baking powder, baking soda and salt; set aside. Add egg and oil to bran; beat ingredients to blend.

4Add flour mixture; stir ingredients until combined.

5Fold in raisins.

6Bake for 20 minutes.

7Makes 12 muffins.
