Ingredients
- 10 to 12 large shrimp, peeled and deveined
- 3 Tbsp. flour
- 1 large green bell pepper or 1 large poblano pepper, seeded and julienned
- 1 large tomato (see note)
- 4 Tbsp. tequila
- 2 Tbsp. lime or lemon juice to taste
- 6 Tbsp. butter
Directions

1Flour shrimp lightly.

2Add enough oil to heated skillet to cover bottom.

3Saute shrimp 1/2 minute on each side.

4Add pepper and tomato and cook another minute.

5Add tequila and flame.

6When flame subsides, add lime juice and simmer for 1 minute.

7Stir in butter and salt and pepper to taste.

8Serve over hot cooked white rice.
