Tequila Shrimp

Ingredients

  • 10 to 12 large shrimp, peeled and deveined
  • 3 Tbsp. flour
  • 1 large green bell pepper or 1 large poblano pepper, seeded and julienned
  • 1 large tomato (see note)
  • 4 Tbsp. tequila
  • 2 Tbsp. lime or lemon juice to taste
  • 6 Tbsp. butter

Directions

    Flour shrimp lightly.

    Add enough oil to heated skillet to cover bottom.

    Saute shrimp 1/2 minute on each side.

    Add pepper and tomato and cook another minute.
  5. 5
    Add tequila and flame.

    When flame subsides, add lime juice and simmer for 1 minute.

    Stir in butter and salt and pepper to taste.

    Serve over hot cooked white rice.
