  • 1 cup Shrimp, cut lengthwise
  • 1 pound Ham, cut into 1/2 cubes
  • 1/4 cup Butter
  • 4 stalks Green onions, thinly sliced, including tops
  • 1/2 clove Garlic
  • 1 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 cup Rice
  • 2 cups Chicken stock
  • 1 Green pepper, medium
  • 3 Tomatoes, peeled and diced
  • 1/2 cup Sherry

Directions

    Saute shimp and ham in butter for 5 minutes. Add onions. Mash garlic with salt and add along with rice and pepper. Pour in chicken stock (2 bouillion cubes and 2 cups of water may be substituted). Simmer for 30 minutes. Stir in green pepper, tomatoes, and sherry. simmer 5 minutes longer.
