- 1 cup Shrimp, cut lengthwise
- 1 pound Ham, cut into 1/2 cubes
- 1/4 cup Butter
- 4 stalks Green onions, thinly sliced, including tops
- 1/2 clove Garlic
- 1 teaspoon Salt
- 1/4 teaspoon Pepper
- 1 cup Rice
- 2 cups Chicken stock
- 1 Green pepper, medium
- 3 Tomatoes, peeled and diced
- 1/2 cup Sherry
Directions

1Saute shimp and ham in butter for 5 minutes. Add onions. Mash garlic with salt and add along with rice and pepper. Pour in chicken stock (2 bouillion cubes and 2 cups of water may be substituted). Simmer for 30 minutes. Stir in green pepper, tomatoes, and sherry. simmer 5 minutes longer.
