- 1 medium onion
- 1 green pepper
- 1/4 c. olive oil
- 3 ripe tomatoes or 1 (6 oz.) can
- 1 lb. ground beef (if planning a main dish)
- 2 c. uncooked rice
- 1 pkg. taco mix
- 4 c. boiling water
- 1 c. frozen corn
Directions

1Chop onion and green pepper and saute in hot olive oil.

2Use a large nonstick frying pan or electric skillet.

3Add tomatoes, cut up in small pieces.

4Saute until tomatoes form a sauce (if planning a main dish, add ground beef here).

5Add rice and saute for a few minutes until well coated.
