  • 1 (8 1/2 oz.) can cream-style corn
  • 2 Tbsp. cooking oil
  • 1 c. shredded sharp Cheddar cheese
  • 2 Tbsp. chopped jalapeno peppers, seeded or use 1 can chopped green chilies
  • 1 c. yellow self-rising corn meal mix
  • 1/2 c. milk
  • 1 Tbsp. sugar

    In a large mixing bowl, combine all the ingredients. Grease an 8-inch square baking pan. Pour batter into prepared pan. Bake at 450° for 25 to 30 minutes or until golden brown.
